 Yes and yes.  Select Word, then Preferences, then open the Save tab.  From the drop-down menu, choose whatever default format you want.

 No.  Word 2011 uses OS X's built in Save as a PDF feature.  Links will be formatted in blue, but they will not be live.

Reviews say that Word 2011 matches the features of its Windows counterpart. Does that include contextual menus that appear for copying/cutting/pasting text, formatting tables, and so on?
Many of those menus will be similar, but they aren't 100% the same.
